Weekday Pulled Chicken Sandwiches with Carrot Apple Slaw

  1. Sandwiches are ALWAYS a hit (I’ve been known to make ‘sandwiches’ out of just about anything to get Emmett to eat it)
  2. Weekdays are crazy. A busy, chaotic, rodeo-of-toddlers, kind of busy.

So, when Emmett and my hubby teamed up on a ‘let’s have pulled pork sandwiches’ mission, I went in search of a healthy, EASY solution that I could easily make happen on a weekday!

Enter the Maple Leaf Natural Selections Slow Roasted Shredded Chicken. We can chat about how many ways I use this stuff (on top of salads, in a stir fry, etc. etc.), but this time it was for the base for our Weekday Pulled Chicken Sandwiches with Carrot, Apple Slaw.

Why do we use the Maple Leaf Shredded Chicken? Well, first of all, every one of Maple Leaf’s products are made with real, simple, and natural ingredients. Really. It’s kind of amazing. Want to know the ingredient list for this Shredded Chicken for example? Chicken, water, vinegar, salt, sugar, onion powder, garlic powder, rosemary extract and white pepper. That’s it. That’s all. And we also love how easy it is! All the slow roasting and seasoning is done for me, which makes it a no-brainer on weekdays.

So, here’s the main event – the recipe we used to create our Weekday Pulled Chicken Sandwiches… and I promise you can have it on the table in 15 minutes!

Weekday Pulled Chicken Sandwiches with Carrot, Apple Slaw (serves 4)

Ingredients

2 packages, Maple Leaf Natural Selections Slow Roasted Shredded Chicken

1 bottle, your favourite BBQ sauce (something with a touch of sweetness works well!)

½ head of Red Cabbage

2-3 Carrots

2 apples (gala work well)

2 Tbsp white wine vinegar

4 Tbsp Mayonnaise

2 tsp Sugar

4 Pretzel Buns (or buns of your choice)

Instructions

  1. Preheat a cast iron skillet (or non-stick pan) over low heat. Add the shredded chicken and BBQ sauce. Mix to combine. Stir occasionally until warmed through.
  2. Shred cabbage, carrots and apples into coleslaw-sized pieces. A food processor or mandolin makes this super easy, but you can dice with a knife as well.
  3. In a small bowl, combine white wine vinegar, mayonnaise and sugar to create the dressing for the slaw.
  4. In a medium bowl, combine shredded cabbage, carrot and apple. Top with dressing, and mix to combine.
  5. Slice buns. Top with warmed shredded chicken and carrot, apple slaw and serve!
  6. Enjoy!
