I love fall. There’s something about the crisp air, the chunky sweaters, and all the deeelicious comfort foods that just get me. And all of that goodness inevitably bleeds into the food our family eats. I mean, if I had my way, I’d be eating a roasted turkey with all the fixin’s for every single meal.
But because I need to find a happy medium between all that tasty fall goodness, and lunches I can feed my crew in a hurry, I wanted to share one of our FAVE fall lunches: The Roasted Turkey, Cranberry, Green Apple Sandwich (aka. a small slice of magic). This bad boy is one that my hubby loves, I love (duh!), and Emmett loves. Again, small slice of magic.
And while the tangy green apples, and cranberry mayo (or aioli if yer feelin’ fancy) are definitely key to pulling this together, I also only use Lilydale® Oven Roasted Turkey Breast to make this beast. The turkey slices are thick and meaty (just like mama makes), and give the sandwich a fantastic anchor that tastes homemade. And did I mention they’re nitrate-free? In fact, Lilydale is celebrating their 75th anniversary this year (that’s 75 years of providing delicious poultry goodness to Canadians!), so treating yourself to this sandwich might just be the perfect way to celebrate!
Okay, so here’s the scoop on how to put this little delight together:
Ingredients (for 4 sandwiches)
Super Easy Artisan Bread, sliced to whatever thickness floats your boat
¼ cup Mayonnaise
¼ cup Cranberry Sauce
1 package (400g) Lilydale® Oven Roasted Turkey Breast
Sharp, Aged Cheddar, Sliced (the older the better in my book, but something with a bite!)
2 Granny Smith Apples, Sliced
Handful of Baby Spinach, washed
- Combine mayonnaise and cranberry sauce to create super fancy cranberry aioli. This should be enough for about four sandwiches (or one, if you’re my hubby…)
- Spread aioli on bread, and assemble toppings – Lilydale® Oven Roasted Turkey Breast, cheddar, apples and spinach. Sandwich hack: I find if you assemble toppings from heaviest on the bottom to lightest on the top (at least roughly), you’ll have a better chance of your sandwich staying together when you bite it!
- Chomp it and enjoy! Seriously, this one’s an easy but DELISH addition to your lunch rotation!
